Seafood Sausages Penne Arabiatta
Penne Arabiatta with seafood sausage – A great way to introduce fish into a popular pasta dish.
You will need:
- Packet of Kilmore Quay Seafood Sausages
- 1 Onion
- 2 cloves of Garlic
- 1 carton of Passatta
- 2 tins of Chopped Tomatoes
- 500g of Penne Pasta
- Balsamic Vinegar
For the Arabiatta sauce, make a batch and keep in the fridge for future use.
Lightly fry a diced onion, a sprig of chopped rosemary and 2 cloves of garlic in olive oil.
Add a dash of balsamic vinegar and simmer to reduce.
Add a carton of passata (sieved tomato sauce) and 2 tins of chopped tomatoes.
Bring to a simmer and cook gently for 25 mins, stirring regularly.
Season to taste.
Cook pasta in boiling salted water with a dash of oil for approx 10 mins until al dente. Allow 100g per person. Drain and return to the pot. Add enough of the tomato sauce to coat the pasta.
While the pasta is cooking fry or grill the sausages. Allow 1 per person.
Slice the sausages and place in the pasta in bowls.
Add shaved Parmesan and enjoy.
